Indulge in this vibrant healthy wrap bowl! Featuring spiced lamb mince, a colourful fresh salad, and crunchy chickpeas, this dish is bursting with flavour and texture. Topped with a creamy yoghurt sauce that adds a refreshing tang, each bite offers a fusion of textures and tastes. Ingredients
400g Quality Mark lamb mince
1 can chickpeas
drained and patted dry with paper towels2 tsp olive oil
2 tsp onion powder
2 tsp garlic powder
2 tsp ground coriander
2 tsp ground cinnamon
1 tsp ground cumin
pinch salt and pepper
4 handfuls baby spinach leaves
1 carrots
peeled and ribboned½ red onion
diced½ cucumber
sliced4 pitted dates
thinly sliced
½ cup Greek style yoghurt
2 Tbsp lemon juice
2 tsp ground sumaci
4 wholemeal wraps
handful fresh mint
handful parsley
lemon
sliced into wedges
Method
Toast the wraps using an air-fryer or in the oven using an oven proof bowl until golden. Alternatively, you can keep the wraps fresh or slightly warmed through.
Combine the Moroccan spices in a small bowl.
Heat oil in a frying pan and cook the mince with half of the spice mixture until browned.
In a large bowl, toss chickpeas with a drizzle of olive oil and remaining spice mixture then toast in the air-fryer or on a baking tray in the oven until golden.
Prepare salad ingredients and toss together in a large bowl.
In a smaller bowl, mix the yoghurt, lemon juice, and ground sumac together.
Place each wrap in a bowl and fill with salad, lamb mince, and a drizzle of yoghurt sauce. Garnish with fresh herbs and lemon to serve.
